Essential Duties and Responsibilities:

  • Product Development -  Coordinate and execute tests during the development phase for new product development projects for offal to value added items; Create basic formulations for review by R&D Management; Perform bench top testing for new items in development. -  Prepare samples of new items in development; Perform cook tests on finished products; Build and execute sensory evaluations and product performance on finished products; Develop specifications and cooking instructions for new product
  • R&D Lab ownership including sourcing new ingredients, cleaning, labeling and management of ingredients.
  • New Products and Reformulation
  • Manufactures pilot-scale batches according to batch instructions and operating procedures (SOPs)
  • Maintains detailed documentation for each batch produced.
  • Create and maintain Specification Sheets for finished goods based on customer requirements and process capabilities
  • Raw Material Sourcing

- Research and source new raw materials for R&D projects as required; Expedite delivery of materials as required; Track purchases of sourced raw materials and MRO goods as required; Support R&D and Production initiatives including sourcing evaluations.; Obtain and maintain approved supplier documentation for current and new raw materials including food contact packaging.


  • Sample Shipping
  • Assist in scheduling sample runs for the test line and the production line; Prepare sample mixing forms for production; Compile data from sample runs for use in creating the finished goods specifications and nutritional analysis; Ensure samples are packaged properly as required by customer; Create UPS/FedEx labels for shipments; Select, package and ship samples to customers as required


  • Technical Support - Prepare research information for customer specific requests for presentations; Coordinate and ship samples for customers; Provide support during initial production and test runs for new products and processes; Participate in customer/vendor visits; Perform basic scientific investigation/troubleshooting per request


  • Approving Raw Material Suppliers
  • Contacting suppliers to obtain documentation as required for approving by FDA / SQF standards. Saving documents to the ERP system for verification.
  • Ingredient verification to include allergen and nutritional facts. Nutritional values to be input into Genesis Esha program and validated as accurate.
  • Maintain Approved Supplier Register
  • Source and approve alternate ingredients through lab and plant trials to improve productivity.
  • Product Certification(s)
  • Liason between customer and certification body to obtain required information for certification.
  • Research and obtain documentation that is required for the following certifications: Kosher, Gluten Free, Non-GMO Project, Paleo and Organic.

Education, Work Experience and Skills Requirements:

  • Ability to flawlessly execute bench work with short timelines
  • Adapts quickly to changes in work priorities
  • Good communications skills (verbal and written), manage expectations of clients
  • Ability to proactively and positively interface with various R&D and Quality groups to assure appropriate sample testing
  • Must be well organized and detail oriented with strong desire to explore innovation, expand knowledge base, and learn new techniques in Food Science and analytical techniques.
  • Proficient in Genesis Esha Research.  Generate NFP and ingredient statement.  Maintain database for Genesis and Plex to present accurate allergen and ingredient statement labels.   
  • Must be proactive, reliable and self-motivated

Physical Requirements:


  • Must be able to lift and carry up to 75 lbs.
  • Complies with Good Manufacturing Practices (GMP's) and all other food safety requirements
  • Complies with Personal Protective Equipment (PPE's) requirements
  • Reports any food safety problems or potentially unsafe practices/conditions to QA and supervisor
  • Constant walking and standing on hard concrete service
  • Frequent bending, stooping, squatting, pushing, lifting and climbing
  • Position will require working in very hot and cold conditions
  • Other conditions include flour dust, wet floors, occasional smoke and fumes if product burns
